  • 2 cloves of garlic
  • 2 medium-sized vegetable onions
  • 2 red peppers
  • 2 medium-sized tomatoes
  • 3 tbsp butter
  • 1.5 tbsp paprika powder (hot or sweet)
  • 4 tbsp tomato paste
  • 300 g white long grain rice
  • 600 ml of water
  • 150 gAjvar
  • 1 tbsp Vegeta or granulated vegetable broth
  • 3 tbsp olive oil
  • salt
  • Black pepper from the mill
  • Some stalks of parsley
  • 150 g peas (frozen)

Material:

  1. Peel the garlic. Peel the onions. Wash the peppers and remove the stalk, grains and partitions. Wash and core the tomatoes. Finely dice the onions, peppers and tomatoes.
  2. Melt the butter in a large pan. Sear the diced vegetables for about 5 minutes.
  3. Reduce heat. Pour the paprika powder and tomato paste over the vegetables, stir everything and continue frying for 1 to 2 minutes.
  4. Press the garlic cloves into the pan.
  5. Add rice to the pan and fry until there is little liquid left.
  6. Deglaze the rice and vegetable mixture with water.
  7. Stir in ajvar, vegeta, olive oil, salt and pepper.
  8. Cover and simmer over low heat for about 10 minutes. Stir occasionally.
  9. During this time, wash, shake off and finely chop the parsley.
  10. Stir in the defrosted peas and parsley.
  11. Continue cooking for about 10 minutes, until the rice is soft.
  12. Finally, season with salt and pepper.

Djuvec rice is a popular side dish in Serbian and Croatian cuisine. The term Djuvec comes from Turkish and originally referred to a pot in which a stew of the same name with meat and vegetables is prepared.
